Summer Fruit Salad with Lime Dressing


Let me first start out by saying my youngest brother has Crohn's Disease and this recipe came from a cookbook that has recipes in it that are good for people with Chohn's or colitis and it's a good healthy recipe that would be great for a dinner party or bbq (or just any sort of gathering).

3-4 tablespoons fresh lime juice (about 2 medium limes)
2 tablespoons sugar (you could substitute with stevia or other better for you sweetner)
1/2 small seedless watermelon, cut into bite sized peices
1 medium cantaloupe, cut into bite sized peices
2 large peaches, pitted peeled and sliced
1 cup seedless red or white grapes, halved
1 pint strawberries, stems removed and halved
1 pint blueberries
1/2 pint raspberries

Stir together lime juice and sugar and set aside. Combine all the fruits in a large bowl. Drizzle the lime dressing and toss gently. Cover and chill 1-2 hours before serving. Garnish with fresh mint if desired.

Makes about 12-14 cups
